Made from completely naturally grown corn (non-GMO, no additives), planted in accordance with the moon cycles on a tiny home-farm run by Brian’s cousin (who is enthusiastic about preserving the local corn varieties) in Valle Brembana- a picturesque mountain valley in Italy’s pre-Alps.

The watermill it is ground in is equally picturesque and small, located a few miles up the valley from the farm. It has been in continuous operation by a local family since the 1600s, still using the original stream-powered machinery to grind the corn into meal.

Farina integrale di Mais is the Italian term for ‘whole milled’, meaning the whole corn kernel is course-milled together with nothing sifted out. This polenta has a beautiful, rustic texture and hearty, full-flavor that lends itself as the perfect accompaniment to traditional ragús & savory braises, just butter and cheese, or a delicious alternative to your morning hot cereal.

It’s simply the finest polenta Brian has ever had and after getting as much as he could carry home from his cousin, he is very excited to be able to share it with you here.
